e Ontario 8828C Watermelon Knife is part of the Old Hickory II series, a purpose built kitchen knife designed to handle the biggest produce in the kitchen. At 17 inches overall with a 12.5 inch blade, this knife has the length and reach to cut clean through a whole watermelon in a single pass, along with cantaloupe, squash, and other oversized fruits and vegetables that a standard chef's knife struggles with.

The blade is 3Cr13 stainless steel, hardened to 55 to 58 HRC and ground with a full flat taper for a straight, stiff utility slice that resists flexing under load. Blade thickness is 0.100", giving it enough rigidity to push through thick rinds and dense flesh cleanly. The satin finish and full tang construction, with the steel running the complete length of the handle, add durability for repeated heavy use in a working kitchen.

The handle is textured, non-slip rubber in a red, white, and blue tri-color patriotic motif, the classic look associated with Old Hickory watermelon knives.
