The 6.02" blade is ground from 12C27 — Sandvik's single-layer high-chromium stainless steel, the benchmark alloy for Scandinavian fishing and fillet knives. 12C27 is optimized for a keen, fine edge that holds through wet, repetitive filleting work while resisting the corrosion that saltwater and fish acids accelerate on lesser steels. Helle polishes the blade to a mirror finish, which does more than look exceptional — a polished surface reduces drag through flesh, allowing cleaner, more precise cuts with less pressure.
